We've been working on upping our vegetable consumption around these parts lately. Which means actually eating some. Usually at dinner. We've even been overachievers this week, having multiple types of vegetables at dinner. We even introduced two new ones - butternut squash and edamame.
We all enjoy edamame - mostly cause its fun to eat I think. I need to try a few other ways of cooking the butternut squash still...although Brennan ate it like it was going out of style. The night I served both he was the most excited about food I've ever seen him. He ate so incredibly much we were rather shocked.
I'm kinda excited about trying the butternut squash ravioli recipe Jill sent me. She warned me it's rather time consuming, so I'm saving that one for a quiet weekend.
So, besides our normal broccoli, cauliflower, and carrots - any other veggies/recipes we should try?
This very night I tried Amy Boles' "Butternut Squash a la Snickers" and Idunno... I've never been good at squash, and it felt like I was making an excuse to eat a Snickers. (yum!)

We've learned to like a lot more vegetables after joining Organics to You and getting all sorts of random veggies every week. We've developed a tolerance of kale (sauted in butter with a little garlic as all good veggie dishes should be) and an actual appreciation for the brussel sprout. I'm still working on finding ways to like squash other than turning them into pumpkin-pie type sweets.

Butternut Squash Chili. I made it last year and it was great. I made too much, though, and it ended up being all I ate for two weeks...

I am very very proud of you! all of you .... especially Brennan. Jill's butternut squash ravioli was deeeeeelicious!! I highly recommend giving it a try.
In fact after Christmas i am going to give it a try too.... shhhh don't tell Wood :-)

I don't have any advice. I am really bad on the veggies as well. It seems like we are limited to broccoli most of the time for what will actually be eaten at the kitchen table. Micah likes edamame also but usually just pops them all over the dinning room without eating most of them. I steamed yellow squash tonight but Micah wouldn't touch it. I mixed it in with broccoli and Micah just ate the broccoli around the squash. We'll keep working on it also. I will have to try butternut squash.
